Novy, Gurgaon has introduced ‘The Usuals’, a new menu that builds on a clear idea: familiarity, reworked. At a time when dining is often driven by constant reinvention, Chef Ashay Dhopatkar and Neha Lakhani (with over two decades of global experience including Michelin-starred kitchens) are shifting the conversation towards refinement, taking dishes people already love and elevating them through technique, contrast, and detail.
Conceived as a response to evolving diner preferences, The Usuals focuses on recognizable flavours and formats, reinterpreted with a contemporary, ingredient-led approach. The menu reflects a balance between comfort and creativity, offering dishes that feel intuitive yet thoughtfully composed.
Art abounds inside Novy
“At Novy, the idea was not to create something entirely new, but to relook at what already works,” says the team. “The Usuals is about building on familiarity, adding depth, and creating dishes that feel both comforting and considered.”
The menu at the 70-cover restaurant laden with modern art, a stylish bar, and a visible kitchen, is designed to be fluid and accessible, encouraging guests to explore across sections while engaging with dishes that are rooted in recall but elevated in execution.
Charred Chicken Leg and Creamy Cashew
Among the key highlights is the Charred Chicken Leg and Creamy Cashew, a nuanced take on malai chicken tikka, where a slow-roasted leg is paired with a fermented chilli glaze and a rich cashew-almond mornay.
The Arrabbiata Noodles reinterpret a classic through format, bringing together the comfort of noodles with the boldness of an arrabbiata, layered with burnt chilli, garlic and texture.
Loaded Mash Plate
Seafood finds expression in the Chipotle Salsa Prawns, where smoky chipotle heat is balanced with the brightness of cherry tomatoes and sun-dried tomato salsa. The Loaded Mash Plate stands out for its simplicity and versatility, placing potatoes at the centre of the plate, finished with a choice of protein and fresh, vibrant elements.
Stuffed Chicken Wings
The menu also introduces more distinctive plates such as the Stuffed Chicken Wings, filled with a delicate chicken mousse and paired with bold accompaniments, and the Black Garlic Butter Fettuccine, which leans into depth and restraint, allowing black garlic, butter and parmesan to define the dish.
Founder's Mocha French Toast
Desserts continue the narrative with the Founder’s Mocha French Toast, combining caramelized brioche, espresso cream, chocolate-hazelnut mousse, citrus notes and brown butter banana, offering a finish that is indulgent yet balanced.
