This summer, Hyatt Regency Delhi has unveiled a curated lineup of seasonal experiences across its restaurants and hospitality spaces. From a vibrant Spanish food festival and authentic Italian summer dining to refreshing seasonal drinks and indulgent staycations, the hotel brings together a series of experiences rooted in exceptional hospitality, thoughtful cuisine, and contemporary luxury.

Kicking off the season’s culinary calendar, Syrah presented a Spanish Fiesta in May, led by Chef Adrià Villarroya Navarro from The Cellar, at Hyatt Regency Oryx Doha, bringing the flavours and dining culture of Spain to the capital through a menu inspired by Barcelona, Valencia, and Seville.

Created around Spain’s shared dining traditions, the festival featured tapas, live paella preparations, grilled specialties, and classic Spanish desserts in Syrah’s warm and inviting setting.

Guests partook of dishes such as Gambas al Ajillo, Patatas Bravas (a Spanish tapas favourite), Croquetas de Setas y Trufa, Paella de Pollo, and Paella de Marisco.
Basque cheesecake and churros
Dessert included the famous Basque cheesecake and Churros con Chocolate. Spanish-inspired mocktails completed the experience.
Paella de Verduras, Vegetarian Paella
Chef Adrià Villarroya Navarro, who hails from Valencia, tells us about the dish native to his city. “It’s paella!” he says, “It’s our most famous dish. Valencia is like Barcelona, but smaller. Paella, which is a rice dish, is traditionally made with seafood (squid, prawns, mussels, with lobster and prawn arranged on top of the rice). But we can also make it vegetarian.” He says he first prepares the vegetable stock for the rice (bomba rice, a short-grained rice variety native to Valencia), then adds saffron, tomatoes and different vegetables, like carrots and mushrooms.

Then there’s artichoke, served like a lamb chop, and slow-cooked garlic chicken. “I take the chicken thigh, put in the herbs and transfer to a pot,” says Chef Adrià. “I make a sauce with rosemary, lime, and garlic, so that the chicken is nice and juicy.”

Continuing the summer’s culinary highlights, La Piazza launches its new Summer Menu, currently available. Known for orienting generations of diners in the capital to authentic Italian cuisine, La Piazza remains one of New Delhi’s most iconic Italian restaurants. The new menu embraces the lighter and fresher side of Italian summer dining, inspired by seasonal ingredients, balanced flavours, and the relaxed pace that defines Italian meals during warmer months.

Among the special additions is the Aperitivo Board, a sharing-style experience inspired by Italy’s beloved aperitivo tradition. The menu also features Indian lobster prepared using classic Italian techniques, the bold and flavourful Chicken à la Diavola, and a selection of freshly handcrafted pastas that define La Piazza’s enduring appeal. Designed around freshness and lighter preparations, the menu is flawless for both relaxed lunches and elegant evening dining.
Summer Coolers from Polo Lounge and Sidewalk
Enhancing the season’s offerings, Sidewalk and Polo Lounge introduce Summer Coolers, a specially curated beverage experience designed for Delhi’s summer season. Spread across both venues, the activation brings together refreshing cocktails and handcrafted mocktails that balance tropical, citrus-forward, floral, and mildly spiced flavours with refined presentation.
Cucumber, passion fruit, lychee, and mango for smooth sipping
The menu features ingredients such as peach, mango, passion fruit, lychee, elderflower, cucumber, berries, and fresh herbs. Signature cocktails include Sunset Nectar, Tropical Verde, Arctic Bloom, Pineapple Picante, and Passion Breeze, while mocktail selections include Lychee Bloom, Ruby Coco Elixir, Guava Chilli Aura, and Fresh Harvest. Designed to complement the lounge fare at Sidewalk and Polo Lounge, the beverages are immaculate for leisurely afternoons and sophisticated evenings alike.
